Ingredients

  • 24 ladyfingers savoiardi
  • 1 ½ cups strong brewed espresso or coffee cooled
  • 4 egg yolks or 1 cup heavy cream as an alternative
  • ½ cup granulated sugar
  • 1 cup mascarpone cheese
  • Unsweetened cocoa powder for dusting
  • Optional: 2–3 tbsp Marsala wine rum, or coffee liqueur

Instructions

  • Brew and cool coffee. Add liquor if using.
  • Whisk egg yolks with sugar until thick and pale (or whip cream separately if using).
  • Fold mascarpone into the egg or cream mixture until smooth.
  • Dip each ladyfinger briefly into the coffee. Don’t soak!
  • Layer soaked ladyfingers in a dish, then spread half the mascarpone mix.
  • Repeat layers and finish with mascarpone on top.
  • Dust with cocoa powder, cover, and chill at least 4 hours.
