Ingredients

Main Ingredients:

  • 1  cup fresh or canned pineapple chunks for creaminess, use frozen
  • 1/2  cup coconut cream not coconut milk
  • ½ cup white rum Bacardi, Malibu or essential white rum brands for pina colada
  • 1 cup ice cubes
  • 2 tbsp simple syrup or sugar to taste

Optional / Substitute Ingredients:

  • Non-alcoholic version: Leave out the rum and mix in 1/2c pineapple juice
  • Vegan alternative: Make sure that there are no dairy additives in the coconut cream
  • Gluten-free: All of the base ingredients are gluten free
  • Garnish: Pineapple wedge maraschino cherry or grated coconut

Instructions

Step-by-Step Instructions

  • Prep the blender (1 min): Combine pineapple pieces, coconut cream, white rum, ice and sweetener in a blender.
  • Puree until completely smooth (1-2 mins): Pulse on high until frothy and creamy. It should be with the consistency of a smoothie.
  • Taste and adjust (1 min): Taste your mix — it may need more sugar or pineapple juice for sweetness, or ice for thickness.
  • Serve immediately (1 min): Strain into prechilled cocktail glasses. Garnish with a slice of pineapple and a cherry on top.
