not coconut milk

white rum
Bacardi, Malibu or essential white rum brands for pina colada

simple syrup or sugar

Optional / Substitute Ingredients:
Non-alcoholic version: Leave out the rum and mix in 1/2c pineapple juice
Vegan alternative: Make sure that there are no dairy additives in the coconut cream
Gluten-free: All of the base ingredients are gluten free
Garnish: Pineapple wedge
maraschino cherry or grated coconut
Instructions
Step-by-Step Instructions
Prep the blender (1 min): Combine pineapple pieces, coconut cream, white rum, ice and sweetener in a blender.
Puree until completely smooth (1-2 mins): Pulse on high until frothy and creamy. It should be with the consistency of a smoothie.
Taste and adjust (1 min): Taste your mix — it may need more sugar or pineapple juice for sweetness, or ice for thickness.
Serve immediately (1 min): Strain into prechilled cocktail glasses. Garnish with a slice of pineapple and a cherry on top.
