Ingredients

For the Chicken:

  • 2 boneless skinless chicken breasts (approx 1 lb)
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper

For the Wraps:

  • 4 large flour tortillas or any gluten-free wraps
  • 2 cups  diced romaine lettuce
  • 1/4 cup all purpose grated or shredded Parmesan cheese
  • 1/2 cup cherry tomatoes cut in half (optional)
  • Croutons if you want some extra crunch

For the Caesar Dressing:

  • 1/3 cup mayonnaise Or Greek yogurt for a healthier version
  • 1 tsp Dijon mustard
  • 1 tbsp lemon juice
  • 1 clove garlic minced
  • 1/4 cup grated parmesan cheese
  • Salt & pepper to taste

Instructions

Make the Chicken (10 minutes)

  • Guy calls for these to be deep fried but that’s unnecessary so pat dry your chicken, season both sides with garlic powder, salt and pepper. Add olive oil to a skillet and heat over medium heat. Cook chicken 4–5 minutes per side or until golden brown and cooked through (165°F internal temperature). Transfer from the heat to a board and let rest for 5 minutes, then slice thinly.

Make the Dressing (5 minutes)

  • In a large bowl, whisk together mayonnaise, Dijon mustard, lemon juice, garlic, Parmesan cheese, salt and pepper until smooth.

Make the Wraps (5 minutes)

  • Place the tortjas flat on your table. In the middle of each, place chopped romaine, sliced chicken, cherry tomatoes, Parmesan, and optional croutons. Drizzle with Caesar dressing.

Wrap and Serve (2 minutes)

  • Fold in the sides of the tortilla, then roll up tightly from the bottom. 5) Cut in half and eat right away or wrap in foil for later.
